Mains
GF (Gluten Free), V (Vegetarian)
Beef Brisket (GF)
Premium Beef Brisket is hand-trimmed and covered in our Local favorite Rubs. We then smoke low and slow overnight with real wood. This produces a tender and juicy slice of beef with a visible smoke ring.
Pulled Pork (GF)
Our Pork is hand-trimmed and covered generously with our favorite local rubs. The pork is then slow-smoked overnight with real wood to develop deep bark and flavor. We then hand pull the pork and add back the pork juices, BBQ Sauce, and a touch more rub to make a delicious and juicy bite.
Pork Ribs (GF)
Side ribs are seasoned lightly with Ed’s Jalapeno Seasoning combined with another favorite rub. We then smoke low & slow for a tender mouthwatering bite. The ribs are lightly covered in BBQ sauce and cut before serving.
Pulled Beef (GF)
We cook beef blade or beef chuck the same way as our pulled pork. This creates a tender, tasty alternative to pork.
Pork Belly (GF)
We rub the pork belly and smoke low and slow for hours. Then, we braise the pork to produce a melt-in-your-mouth decadent bite. The pork belly is finished with BBQ sauce and is served sliced.
Bratwurst (GF)
House-made, this recipe was developed for a Back Yard Sausage Competition. The fresh Bratwurst is smoked until just cooked, then finished on a grill to sear in the juicy flavors. Can be served whole or sliced.
BBQ Chicken (GF)
Drums and Thighs are dusted with a mild Rub and then smoked lightly with Cherry or Applewood. The Chicken is then finished on the grill and glazed with BBQ Sauce.
Pulled Chicken (GF)
Chicken Thighs are rubbed and smoked until they have that perfect color and a touch of bark. Then, we braise the chicken until very tender, hand-pull it, and add BBQ sauce and the braising juices.
Tri Tip (GF)
AAA tri-tip is cooked the same way as our beef brisket. This is a leaner but still very tender and tasty alternative to brisket. Tri-tip can also be served medium-rare and sliced before serving.
Sides
GF (Gluten Free), V (Vegetarian)
Smoked Mac & Cheese (V)
We use three cheeses, cream, and just the right amount of seasoning and smoke. Each pan contains more than a pound of real cheese. Rich and creamy and topped with seasoned panko breadcrumbs.
Smoked BBQ Beans(GF) (V Option)
We mix five different beans with our special sauce and seasonings, onions, peppers, and house smoked meats. These southern-style beans are then smoked to perfection. Meat can be removed on request to make a vegan/vegetarian option.
Roasted Potatoes (GF) (V)
Baby potatoes are lightly seasoned with a blend of Italian and Ed’s jalapeno seasoning and lightly smoked until tender. Served with sour cream.
Perogies (V)
Baked on the smoker with onions, butter, and light seasoning. Served with sour cream.
Garlic Mashed Potatoes (GF) (V)
Boiled potatoes mashed with cream, butter, garlic powder, and a touch of parmesan cheese.
Jalapeno Corn Bread (GF) (V)
This cornbread is gluten-free and lightly seasoned with jalapeno and bell peppers. Served warm.
Coleslaw (GF) (V)
We add a touch of apple and purple onions, then lightly mix with our house-made coleslaw dressing.
Ceasar Salad (V) (GF Option)
Fresh-cut romaine lettuce lightly dressed with a GF Garlic Caesar dressing and freshly grated parmesan cheese and croutons. It can be made gluten-free by requesting no croutons.
Baked Corn Kernels (GF) (V)
Corn kernels are baked on our smoker with butter, margarine, bell pepper flakes, and a touch of seasoning.
Baked Mixed Vegetables (GF) (V)
Peas, corn, carrots, and green beans are baked on our smoker with butter, margarine, bell pepper flakes, and a touch of seasoning.

Please advise on any allergies, and we will customize any meats or sides to accommodate them. If there is a Meat or Side you prefer but don’t see, please let us know. We will work with you to add any new or special items.
Please include all contact information, the Date of the Event, and the Location of the Event, and submit the form. We will acknowledge receipt in 24 hours and contact you if we need any further information. We currently service Regina, Lumsden, and surrounding areas. Further locations may be subject to a fuel travel charge. This will be shown in the final quote. Price Charts for Dinner Options are current as of March 2024 and are subject to change and availability. We will provide a final quote for the event and discuss any substitutions.
Once a quote is accepted, a deposit of 25% is required to reserve your event date. Fourteen days prior to the event date, an additional 25% of the quote will be required, as well as the final guest count. Cancellation must be made 14 days before the event for a refund. Once 50% of the deposit is paid, products will be ordered for your event, and refunds are no longer available. We can reschedule your event based on availability.
